Chicken & Courgette Fritters
Juicy, veg-packed fritters that sneak in protein and moisture — soft enough for gums, sturdy enough for the high-chair grip test.

Ingredients
- 150g cooked chicken, finely shredded or minced
- 1 medium courgette (zucchini), grated and squeezed very dry
- 1 egg
- 3 tbsp plain flour
- 1 tbsp grated parmesan (optional)
- Olive oil, for frying
Method
- Squeeze the grated courgette in a clean tea towel until no more liquid comes out — this is the crisp-fritter secret.
- Mix courgette, chicken, egg, flour and parmesan into a thick batter.
- Fry heaped tablespoons in olive oil over medium heat, flattening slightly, 2–3 minutes per side until golden.
- Drain on kitchen paper and cool before serving.

Serve as finger-length strips; the soft interior mashes easily against gums.
9+ months
Quarter the fritters into chunky pieces for pincer practice.
12+ months
Whole fritters with a yogurt-herb dip — great for daycare lunchboxes too.
