Broccoli & Cheese Egg Muffins
Make-ahead mini frittatas that cover breakfast for the week — soft, protein-rich, and a gentle way to serve egg regularly.

Ingredients
- 4 eggs
- 80g broccoli, steamed and finely chopped
- 40g mild cheddar, grated
- 2 tbsp milk or unsweetened oat drink
- 1 tsp olive oil, for greasing
Method
- Heat the oven to 180°C / 350°F and grease a mini-muffin tin well.
- Whisk eggs with milk, then stir in broccoli and cheese.
- Fill the muffin cups and bake 12–15 minutes until set and lightly golden.
- Cool fully; keep 3 days in the fridge or freeze for a month.
